    Ingredients

    Filling:

    • 1½ lb boneless chicken breast (cubed)

    • 1 medium onion (minced)

    • 1 medium potato (diced)

    • 1 cup chopped carrot

    • 1 cup green peas

    • 1 clove garlic (minced)

    • ¼ cup raisins

    • ½ tsp salt

    • ½ tsp ground black pepper

    • 1 tsp sugar

    • 2 Tbsp cooking oil

    • ½ cube chicken stock

    Dough:

    • 3 cups all-purpose flour

    • 4 Tbsp sugar

    • 6 Tbsp water

    • 1 egg

    • 1 cup melted butter

    • ½ tsp baking powder

    • ½ tsp salt


    Cooking Instructions:

    1. Cook the Filling:

      • Heat oil in a pan.

      • Sauté garlic and onions, then add cubed chicken.

      • Add a splash of water and the chicken stock cube.

      • Stir until the chicken is golden brown.

      • Add carrots, potatoes, peas, raisins, and sugar.

      • Cook until veggies are soft, then season with salt and pepper.

      • Drain any extra liquid and set aside.

    2. Prepare the Dough:

      • In a large bowl, mix flour, sugar, baking powder, and salt.

      • Add melted butter, egg, and water. Mix until dough forms.

      • Roll out the dough flat on a clean surface.

    3. Assemble the Empanadas:

      • Place a spoonful of the chicken mixture in the center of the dough.

      • Fold the dough over and seal the edges with a fork.

      • Brush with egg white for a golden finish.

    4. Fry the Empanadas:

      • Heat oil in a frying pan.

      • Fry until golden brown and crispy on both sides.

      • Drain on paper towels and let cool before serving.
